What you’ll need

  • 1tbsp rapeseed oil
  • 2 small shallots, finely diced
  • 1 apple, peeled, cored & diced
  • 1 clove garlic, crushed
  • 1tbsp medium curry powder
  • 1tbsp plain flour
  • 1tsp fresh ginger, finely chopped
  • ½tsp tomato puree
  • Salt & ground black pepper
  • 1/2 tsp fish stock paste
  • 17oz water

How to make it

  1. Heat the oil in a saucepan on a medium heat
  2. Sweat shallots until soft & add garlic, ginger & apple
  3. After 2-3 mins add tomato puree, curry powder & flour stir well then add water & stock paste, stir and simmer for 10mins
  4. Liquidize slightly with a hand blender making sure to retain some texture
