What you’ll need

  • 3oz macaroni
  • 1.75oz white cabbage finely sliced
  • 1.75oz red cabbage finely sliced
  • 2 scallions, finely sliced
  • 1 tbsp of finely sliced celery
  • 1/4 small cucumber, finely chopped
  • 1/2 green pepper, finely chopped
  • 1 tbsp of mayonnaise
  • 1/2 tsp sugar
  • 1 tsp vinegar
  • Seasoning

How to make it

  1. Cook macaroni according to package directions; drain and rinse in cold water. Transfer to a large bowl; add the cabbage, scallions, celery, cucumber and green pepper.
  2. In a small bowl, whisk the dressing ingredients. Pour over salad; toss to coat, check seasoning. Cover and refrigerate for at least 1 hour before serving.
