How to make it
- Preheat oven to 450°F, gas mark 8.
- Combine the zucchini, tomatoes, onion, garlic and red chilli flakes in a baking dish. Drizzle with olive oil and season with salt and pepper; mix well.
- Place in preheated oven. Roast until vegetables are tender and slightly golden, about 15-18 minutes.
- Sprinkle with the Parmesan cheese and basil and bake for a further 5 minutes.
