What you’ll need

  • 2 zucchini, cut in ribbons
  • 4 ripe tomatoes, quartered
  • 2 small onions cut in wedges
  • 3 cloves garlic, crushed
  • 1/2 tsp dried red chilli flakes
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • 1oz finely grated cheddar
  • 1 tablespoon freshly chopped basil
  • Serves

How to make it

  1. Preheat oven to 450°F, gas mark 8.
  2. Combine the zucchini, tomatoes, onion, garlic and red chilli flakes in a baking dish. Drizzle with olive oil and season with salt and pepper; mix well.
  3. Place in preheated oven. Roast until vegetables are tender and slightly golden, about 15-18 minutes.
  4. Sprinkle with the Parmesan cheese and basil and bake for a further 5 minutes.
