Minted Mushy Peas

  • 7oz Garden Peas
  • 0.7oz Butter
  • Handful Of Chopped Fresh Mint
  • 1tbsp White Wine Vinegar

  • 2 Large Sweet Potatoes
  • 2tbsp Olive Oil
  • ½ Tsp Smoked Paprika
  • Sea Salt & Freshly Ground Black Pepper

Minted Mushy Peas

  1. Boil garden peas for 2 minutes.
  2. Add the butter, finely chopped mint and white wine vinegar.
  3. Blend until broken down but still retaining some texture.

Speedy Sweet Potato Fries

  1. Peel the sweet potatoes and cut them into French fries.
  2. Heat the olive oil in a frying pan, add sweet potatoes and saute for 6-7 minutes turning regularly.
  3. When golden, remove from pan and place on kitchen roll, pat off excess oil with another piece of kitchen roll.
  4. Season with Salt, Pepper & Smoked Paprika.
