What you’ll need

For the Salad

  • 1 small yellow tomato
  • 1 small red tomato
  • 1 small green tomato
  • ½ small fennel bulb
  • 1 small red onion
  • 4 radishes
  • Fresh cilantro, chopped

For the Dressing

  • 3 tbsp olive oil
  • 1 tsp balsamic vinegar
  • Salt & ground black pepper

For the Mayo

  • 4oz good quality mayo
  • ¼tsp smoked paprika
  • Squeeze of lemon juice
  • Cooking time

How to make it

To make the dressing

  1. Mix olive oil balsamic & seasoning.

To make the salad

  1. Slice tomatoes, fennel, radishes & red onions.
  2. On a plate layer tomatoes, add fennel, radishes on top, add red onions.
  3. Pour dressing over salad - leave to marinade & finish with torn cilantro leaves.

To make the mayo

  1. Mix the mayo with a squeeze of lemon juice.
  2. Add smoked paprika.
  3. Place in ramekin.

To serve

  1. Enjoy with our Wild Caught Chunky Haddock Fillets in our Light & Crispy Batter and a wedge of lemon.
