What you’ll need

  • 1 small butternut squash, cut into chunks
  • 8 whole cherry tomatoes
  • 1 large handful of young spinach
  • 2 crushed garlic cloves
  • 1 tbsp of extra virgin olive oil
  • 1 tsp of balsamic vinegar
  • Sea salt & freshly ground pepper
  • Serves

How to make it

  1. Preheat oven to 390°F, gas mark 6.
  2. In a bowl mix all ingredients without the spinach.
  3. Place on a baking tray and cook in oven for 10 to 12 minutes.
  4. Transfer into a bowl, add spinach leaves and toss gently.
  5. Check seasoning and serve.
